
I love dessert, and was looking for something healthy. While browsing through a diabetic cookbook I found a recipe for a fluffy blender orange drink. I thought that perhaps frozen berries might be a nice option, but instead of serving it as a beverage, I decided to freeze it and serve it as an ice cream alternative. I doubled the ingredients and poured it into an ice cube tray and placed it in the freezer. The above photo shows the end result.

Non Fat Milk 1 cup
Frozen Berries 1 cup
Artificial sweetener to equal 2 tsps of sugar
1/2 tsp Vanilla Extract
1/4 tsp Almond Extract

Place all ingredients in a blender and blend until foamy.

When mixture is ready, pour into an ice cube tray and place in freezer. When firm place in serving dishes and top with a few berries.

While on vacation last weekend, I knit a new dishcloth for the trailer. I used to knit a lot, but have gotten away from it recently. I’d forgotten how nice it is to just sit and knit. I’ve often heard that knitting is good for the brain and I wondered why, so I went on line to find out. While knitting you are focused on the moment and not thinking of problems, or things that might be stressing you. Knitting puts you in a meditative like state, which decreases your heart rate and blood pressure. When knitting you are concentrating on a pattern and often learning new stitches which is a great exercise for the brain. It is also a wonderful way to exercise your hands and keep fingers limber and flexible. Being part of a knitting group always made me feel good because I was creating something for someone else.
