Irish Oatmeal Bread

Oatmeal breadI love looking through my old cookbooks for recipes I used when we were first married. This one is from a McCall’s cookbook that was given to me as a shower gift in Canada. We spent the first seven years of our marriage in London, Ontario, Canada before moving to California.

Ingredients

3 cups all-purpose flour                                                                      1 egg

1 1/4 cups oatmeal                                                                             1/4 cup honey

l 1/2 tablespoons baking powder                                                        1 1/2 cups milk

1 tsp salt                                                                             1 tablespoon butter

Instructions

Preheat oven to 350° F.  Grease a 9-by-5-by-3 inch loaf pan.

In a large bowl, mix flour, oats, baking powder and salt.

In a medium bowl using rotary beater, beat egg with honey and milk.  Combine well.

Pour egg mixture into oat mixture, stir with wooden spoon,  just until dry ingredients are moistened (mixture will not be smooth).

Spread batter in prepared pan and bake 1 hour and 10 minutes, or until top is brown and cake tester inserted in center comes out clean.

Turn out loaf onto wire rack. While still warm, brush top with melted butter.

Irish Oatmeal Bread is a hearty bread and perfect for eating alongside a savory soup. It is very easy to make and delicious to eat, especially with butter. It is also delicious with honey and a cup of tea.

  1. Looks really yummy! I made sourdough bread a few days ago–But used my bread maker so that’s kind of cheating, I guess! X
