A Cool and Easy Low Calorie Dessert

A cool and easy, low calorie dessert was a perfect choice.  We are having a heat wave in California and I was looking for a cool dessert, preferably a low calorie one. I made some orange jello and wanted to dress it up a bit. I had some applesauce, so added some to the dish along with the jello. The combination was refreshing and tasty, plus it was easy to make. I used sugar free gelatin and unsweetened applesauce, so it made for a healthy, low calorie dessert. Just, what I’d been looking for.

Frozen Berry Fluff

  • finished-berries
I love dessert, and was looking for something healthy. While browsing through a diabetic cookbook I found a recipe for a fluffy blender orange drink. I thought that perhaps frozen berries might be a nice option, but instead of serving it as a beverage, I decided to freeze it and serve it as an ice cream alternative. I doubled the ingredients and poured it into an ice cube tray and placed it in the freezer. The above photo shows the end result.
