A delicious and easy to prepare turkey chili. This is one of our family favorites and the perfect recipe to double and prepare ahead. It is even tastier on the second night.
1 pound ground turkey
1/2 teaspoon salt
1 cup chopped onions
1 cup finely chopped celery
1/2 cup finely chopped green pepper
1 can 16 oz. or approximate, cut up tomatoes with liquid. I give them a quick mix in the blender.
1/2 teaspoon oregano
1 teaspoon chili powder (more if desired)
1 can 16 oz. red kidney beans
1/2 cup beef broth
1 cup of finely chopped zucchini can be substituted for celery
Place ground turkey in skillet and sprinkle with salt. Cook over a medium heat until all the meat changes color. Blend with a fork so meat has a crumbled consistency.
Add onions, celery, and green pepper. Mix well.Cover and cook over medium heat for 2 to 3 minutes.
Add tomatoes and liquid and all seasonings, mixing well. Bring to a boil, cover, then turn heat to low and simmer gently for 25 minutes, stirring occasionally.
Next add drained kidney beans and beef broth. Gently stir and simmer uncovered over low heat for another 15 to 20 minutes.
Serve with shredded cheese, bread, and a salad for a wonderful meal. Enjoy!
I love looking through my old cookbooks for recipes I used when we were first married. This one is from a McCall’s cookbook that was given to me as a shower gift in Canada. We spent the first seven years of our marriage in London, Ontario, Canada before moving to California.
3 cups all-purpose flour 1 egg
1 1/4 cups oatmeal 1/4 cup honey
l 1/2 tablespoons baking powder 1 1/2 cups milk
1 tsp salt 1 tablespoon butter
Preheat oven to 350° F. Grease a 9-by-5-by-3 inch loaf pan.
In a large bowl, mix flour, oats, baking powder and salt.
In a medium bowl using rotary beater, beat egg with honey and milk. Combine well.
Pour egg mixture into oat mixture, stir with wooden spoon, just until dry ingredients are moistened (mixture will not be smooth).
Spread batter in prepared pan and bake 1 hour and 10 minutes, or until top is brown and cake tester inserted in center comes out clean.
Turn out loaf onto wire rack. While still warm, brush top with melted butter.
Irish Oatmeal Bread is a hearty bread and perfect for eating alongside a savory soup. It is very easy to make and delicious to eat, especially with butter. It is also delicious with honey and a cup of tea.
Root Beer and Milk
Simply pour root beer into a glass and add four ounces of milk. Stir and enjoy.
I use diet root beer and non fat milk, but you can vary that if you wish.
It tastes like a melted root beer float, and I love it.
I hope you’ll give it a try.
I was given this recipe for Sweet Potato Casserole many years ago. It is one of my favorites. The recipe calls for sweet potatoes, not yams. I have tried it with both, and sweet potatoes are the best. The leftovers are delicious served cold like a dessert. I hope you will give it a try. It is very tasty, and perfect for Thanksgiving and Christmas dinner.
Three good sized sweet Potatoes 2 Eggs
1 Stick Butter ¼ Cup Milk
½ cup Sugar 1 ½ tsp. Vanilla
¼ cup Brown Sugar
Cook, peel & mash potatoes. Mix with other ingredients (besides topping). Place in an ovenproof glass baking dish.
Mix all the Topping ingredients together with the melted stick of butter. Put topping mix on top of potato mixture in a glass baking dish. Bake at 450° degrees for 15 minutes or until golden brown. This sweet potato casserole is delicious, and I bet it instantly becomes one of your favorites.
